2005 © Oficina Virtual de Turismo It is between the Douro and the Minho, the origin of the Portuguese nation, that Porto is located, with many cultural traditions, among which one in particular should be highlighted, since it is acknowledged as important and of interest to our visitors: gastronomy. When discussing Porto, it is imperative to talk about some of its traditional dishes, among which we have to mention, for historic reasons, Tripes cooked in the Porto style. This dish is celebrated not so much for its preparation (veal tripes with smoked sausages and white beans) as for the giving attitude of the people of Porto that it exemplifies: when times were hard, they would agree to give up all their meat to the ships that sailed to the conquest of the north African strongholds, keeping for themselves little more than the tripe of their livestock for their own sustenance. Today it is the exlibris of Porto gastronomy. More than a recipe, the dish represents an attitude that still defines the spirit of Portuguese northerners: generosity, sacrifice, openness and hospitality.

We should not forget the salt-cod and meat dishes, as well as the most tasty and rich traditional confectionery. Eating Porto-style is to eat in abundance, with quality and with great refinement, always on tastefully laid tables dominated by the work of our silversmiths over embroidered linen tablecloths.
